Chicken Processing: How to Process Chicken in Step-by-Step Order

For billions of people, they eat chicken every day. If the meat is not processed properly it may become infected. It is most important for proper processing to make sure the chicken meat does not become contaminated.

Step 1: Get Chickens from Farms

Step 2: Stun Chickens

Chickens are stunned before they are slaughtered. Electric water baths or controlled gas systems render them unconscious. By stunning, the process becomes much kinder.

Step 3: The Slaughtering Procedure

After chickens are stunned, their main blood vessels are cut, killing them. This is done by skilled workers or automated machinery under strict supervision, however it is carried out. This is to ensure that the meat is bled clean and fast.

Step 4: Scalding and Plucking

The chickens are put into a big tub of hot water after being slaughtered. The ducks will gasp and flail briefly before slumping down hopelessly from dizziness. Their body joints, in contrast, remain very stiff after a while. This treatment makes it easier to remove the feathers.

There are special machines that use rubber fingernails to gently remove feathers. This method is fast and efficient. After all the feathers have been removed, wash out any blood or feces which remains on the chicken. It takes two minutes for a large chicken body to pass by. Step 6: Cleaning & Cooling

After evisceration chickens are thoroughly washed with clean water. This process will remove blood, feathers and other debris

The carcasses are sent to cooling systems. This can be either by air or water. Then, the meat is ‘chilled’. When a piece of meat is chilled it stays fresher longer.

Step 7: Cutting and Deboning

Chilled chickens can be sold as whole birds or cut into various pieces. The carcass can be divided into wings, drumsticks, and breasts by skilled workers, or cutting machines.

The deboning process involves removing bones from meat, creating boneless meat. Commonly used for cooking ready meals, this step is important in that it offers a wide range of products for consumers to choose from.

Step 8: Packaging Meat

The packed meat is then put in vacuum bags or plastic trays. Packaging keeps meat fresh and reduces the number of contaminated products making their way through a factory line

When labelling, add information such as weight, expiry date, and storage instructions. Packing machinery has a big effect on the preservation of food. This method, the modern way of packing, increases shelf life because it reduces air exposure.
