Ascorbic acid is an organic acid with antioxidant properties. Its appearance is white to light yellow crystals or powder. It is water soluble. The L-enantiomer of ascorbic acid is commonly known as vitamin C. Ascorbic acid (vitamin C) is an essential nutrient that the human body cannot create from other compounds. It is needed for the formation of collagen, the protein that makes up connective tissue and is essential to muscles, bones, cartilage and blood vessels. It is also a good anti-oxidant, preventing damage from oxygen free radicals. Ascorbic acid was primarily manufactured in China, where over 80% of the world’s production comes from.
