Agars are known as water-soluble, gel-forming polysaccharide extracts from agarophyte members of the Rhodophyta. Agars are usually composed of repeating agarobiose units alternating between 3- linked ?- D-galactopyranosyl (G) and 4-linked 3,6- anhydro-?- L- galactopyranosyl (LA) units. Bacteriological agar is a solidifying agent for use in preparing microbiological culture media in a laboratory setting. The use of agar in bacteriology is one of the most important uses and requires strict physical-chemical control as well as the absence of hemolytic substances and what is more important and difficult, the absence of any bacterial inhibitors. Powdered products accounted for over 90% of the overall volume share in last year and are expected to grow at 3.7% CAGR from present year to 2025.
