Calcium propionate is a food preservative which largely used in the bread industry as mould inhibitor. It is manufactured with other food preservatives of food additives. It is manufactured by using line and propionic acid. In India, there is not availability of propionic acid as raw material in our country it is required to import the product from china, or European country. All the machineries, which are used for the manufacturing of propionic acid are filtration unit, reaction vessel, and driers, which are all indigenously available in our country. There is availability of full proof technology in our country. There is market demand of calcium propionate increases as increase the bread production. Average demand of the market increase 8-10% per annum. There is no import of this product in India. There is no pollution produce in the manufacturing of this product. As a whole the product has fair market demand. There are few organized as well as few unorganized sectors are engaged in this production along with their other bakery additive. There is scope of new entrepreneur will be successful if they produce quality product with economic price.
